Blackcurrant Mojito. This recipe makes enough for three 400ml glasses

Ingredients

  • 600g apples (or 1 and 1/4 C fresh apple juice (300ml))
  • thirty mint leaves
  • plus three small mint sprigs
  • three limes
  • 6t agave nectar
  • 6T blackcurrants (90ml)
  • twelve ice cubes (or 3C crushed ice)

A beautiful cocktail for gently sipping on a hot day.

Method

  • Wash all the ingredients as necessary.
  • Juice the apples. 600g of apples should yield about 300ml of fresh apple juice.
  • Crush the ice cubes. This should make about three cups of crushed ice.
  • Work on one 400ml glass at a time.
  • Chop one of the limes and muddle well with 10 mint leaves and a tablespoon of crushed ice
  • In another glass muddle 2T blackcurrants with 1/3 C of crushed ice. To this add 100 ml of fresh apple juice, 2t agave nectar and another 1/3 C of crushed ice. Shake together using the cocktail shaker.
  • Pour the shaken mixture back over the mint and limes in the first glass.
  • Top up with 1/4 C of crushed ice.
  • Insert two straws together and decorate with a small mint sprig.
  • Repeat the process with the other two glasses.

Serve

  • Ideally allow to stand for for ten minutes to allow the juices to mingle, then serve fresh. Delicious!
  • Sip slowly while you chat on the patio on a hot afternoon!

Afterwards
