Sun dried cherry tomatoes. This recipe makes approximately 50g.


  • dehydrator


  • fresh cherry tomatoes (500g)
  • a quarter teaspoon of Himalayan rock salt


  • I made this when I was trying out my dehydrator. You can try other types of tomatoes and the bigger ones are obviously less tedious to chop up. Do start with something fresh and full of flavour, ideally from your garden. The dehydration process really concentrates the flavours.

You can dry many different fruits in the dehydrator. This recipe is just an example using cherry tomatoes. At the time they were good quality and cheap so I decided try them out in the dehydrator. The weight reduction is astonishing but you do get beautifully concentrated flavours for use in other recipes.


  • Wash the tomatoes and discard the stalks.
  • Slice them up and spread them over a dehydrator sheet. Gosh that seemed to take an age, hope it's worth it!
  • Sprinkle over with a few grains of salt just to bring out the flavour, but don't overdo it.
  • Dehydrate at or under 46C (115F) for 12 hours, then turn them over on the sheet and continue for another 12 or more hours.


  • Serve with salads, use in other recipes, or simply eat as a snack.


  • Clean the dehydrator sheet.
  • Recycle the waste.
