Ingredients

  • one fresh coconut (850g)

  • Make sure your coconut isn't cracked when you buy it. Shake it gently to make sure it has some coconut milk in it.

You can make your own coconut flakes to use in other recipes. You just need a good quality food processor to slice up the coconut meat.

Method

  • Use a suitable corkscrew to drill out two of the eyes of the coconut. Invert the coconut over a glass to drain the milk. The milk should be clear and smell fresh. It can be used elsewhere.
  • Place the coconut on a tea towel on a hard surface. Crack the shell with a suitable hammer. Carefully remove the nut meat and discard the shell.
  • Use the slicing blade in the food processor to slice up the coconut meat.

Serve

  • Coconut flakes can be used in several other recipes. They can also be dehydrated. You can keep fresh coconut flakes in an airtight container in the fridge for a day or so. They won't keep for very much longer.

Afterwards

  • Clean the food processor. Take great care with the slicing blade. Please don't let your fingers go anywhere near it.
  • Recycle the waste
