celery (Apium graveolens)

  • Celery is a biennial plant in the same plant family as carrots, fennel, parsley and dill.
  • In raw food recipes celery is often juiced to make green smoothies or as a liquid for a soup base.
  • You can juice the leaves too!
  • Wash the celery well. It really is best to buy organic if at all possible. If the crop has been sprayed then the spray will accumulate at the base of the stems, so do break these away and give them a really good clean.
  • Celery is a source of vitamin C.
