allspice (Pimenta dioica)

  • Allspice is a highly aromatic dried berry named because its flavour resembles a combination of pepper, cloves, cinnamon and nutmeg.
  • Allspice is the dried fruit of the Pimenta dioica plant. The fruit is picked green and unripe. It is then sun dried until it becomes brown like peppercorns.
  • For the best flavour, buy whole dried fruits and grind them as required, rather than buying ground allspice.
  • Allspice leaves are also used in traditional recipes in much the same way as bay leaves, but they don't keep in the way that bay leaves do.
