A great tasty salad dressing

  • Remove the skin from the tomatoes. If you dip them into nearly boiling water for less than a minute the skins can easily be removed without cooking the tomatoes.
  • Wash the mint and discard the stalks.
  • Peel the lemon and discard the skin.
  • Peel the garlic cloves.
  • Put the tomatoes, mint, lemon and garlic into the blender.
  • Add the white wine vinegar, olive oil and a pinch of Himalayan rock salt.
  • Blend together until mixed.
  • Add a little more white wine vinegar or a little water if you prefer it slightly thinner.

  • Pour into a small serving jug or similar
  • Serve with any salads

  • Clean the blender
  • Recycle the waste
