Pomegranate basil dressing.


  • Blender / mini blender


  • 5T pomegranate seeds
  • 3T olive oil
  • 1T apple cider vinegar
  • 1T tamari soy sauce
  • 3T fresh basil leaves
  • 2 garlic cloves
  • 1T fresh parsley leaves


  • You should easily get sufficient seeds from a fresh pomegranate. Simply add any remaining seeds to the green leaved salad mix that you intend to serve with this dressing. This makes the salad more colourful and interesting.

This fresh fruity dressing goes well with any green leaved salad mixes like rocket, lettuces and lambs lettuce.


  • Finely chop the garlic cloves.
  • Simply put everything into the blender jug. Blend until the pomegranate seeds are chopped up and the dressing is sufficiently smooth.


  • Pour into a small serving jug or similar
  • Serve with any green salads.
