Orange and thyme dressing. This recipe makes about 1C (240ml)


  • mini blender


  • 1/4 C fresh lemon thyme leaves (25g) A small (50g) bunch of lemon thyme will give this.
  • One large fresh orange (250g to 300g)
  • 1/2 C olive oil
  • 1t black peppercorns
  • a few grains of Himalayan rock salt

A fresh and mild salad dressing that won't overpower the taste of salads.


  • Peel the orange, discard any pips.
  • Chop up the lemon thyme leaves fairly finely.
  • Crush the peppercorns.
  • Put everything into the blender jug including the olive oil and a pinch of Himalayan rock salt.
  • Pulse blend until everything is mixed.


  • Serve fresh with green salads or more exotic salad dishes where a subtle dressing is required.
