Courgette noodles. This recipe makes enough for two.

  • 2 courgettes (350g)
  • 2t flax seed oil
  • 1/4t black peppercorns
  • 1T fresh sage leaves
  • 1/4t Himalayan rock salt

For the sauce

Courgettes are great made into noodles, especially if you allow these to marinate a little with some fresh herbs. Serve with Stroganoff sauce


  • Wash and dry the courgettes. Top and tail them and cut each one if half so that they will fit squarely into the spiralizer. Using the course blade, gently spiralize each half courgette keeping its axis central to the machine. Put the courgette noodles into two individual pasta dishes.
  • Use the seed grinder to grind up first the black peppercorns, and then the sage leaves.
  • Sprinkle the pepper, salt and sage over the courgette noodles.
  • Sprinkle over with the flax seed oil.
  • Briefly toss with a fork and then it's best if you can allow this to stand for an hour.

  • Clean the spiralizer.
  • Clean the seed grinder.
  • Recycle the waste
